What we grow

Coffee

Forest-grown Arabica, from cherry to cup.

OVERVIEW

HOW WE WORK IT

Our coffee grows under forest shade at the Skugga coffee farm in Doi Saket. We have been planting there since 2016. We pick, process and roast it ourselves, then serve it in our café and sell it as single-origin beans.

IN THE FIELD

THE CHALLENGE

WHAT YOU CAN LEARN

  • Shade-grown cultivation
  • Washed, honey, natural and anaerobic processing
  • Drying to 8–12% moisture
  • Roasting
  • Cupping and brewing

Selective picking, controlled fermentation and slow, even drying decide the quality of the cup more than the tree does.

THE VALUE LADDER

  • Cherry: about 25 baht/kg
  • Green beans: 300–500 baht/kg
  • Roasted beans: 1,800–2,450 baht/kg
  • By the cup: 100–140 baht (6,000+ baht per kg of roasted coffee)

DID YOU KNOW?

About 100 g of cherry, worth around 2.50 baht, makes a cup that sells for 100 baht or more. Coffee has the steepest value ladder of anything we grow.
