What makes Skugga coffee different from other Chiang Mai cafes?
Skugga is a "Farm-to-Cup" estate. We grow, process, and roast our coffee on-site in Mae On, Chiang Mai. This gives us 100% control over quality and allows us to use advanced processing methods like Carbonic Maceration that standard cafes cannot offer.
Can I visit the Skugga Coffee Roastery?
Yes! We are open to the public every day from 9:00 AM to 7:00 PM. Visitors can see the roasting process, enjoy a specialty pour-over, and explore the plantation grounds.
Do you sell roasted beans to take home?
Absolutely. You can purchase bags of our Strawberry Fields Forever, Drunken Sailor, and other seasonal roasts directly at our shop or order them for delivery.
Our Coffee Processes: The Science of Sweetness
We don't just grow coffee; we engineer flavor. At Skugga Estate, every bean is treated with a specific processing method designed to unlock its hidden potential. Which profile fits your palate?
1. Choose Your Profile (The Process)
Stop guessing. Here is what they actually taste like.
Washed Process (The Classic)
Clean. Bright. Balanced. We ferment the beans in water for two days before solar drying. This strips away the fruit flesh, leaving a pure, crisp coffee that highlights the bean's natural acidity.
-
Best for: Morning rituals and black coffee drinkers.
Natural Process (The Fruit Bomb)
Jammy. Bold. Sweet. We dry the beans inside the cherry fruit. As they dry in the sun, the beans absorb the natural fruit sugars, creating a coffee with intense berry notes and a heavy body.
-
Best for: Lovers of exotic, fruity flavors.
Honey Process (The Complex Sweetness)
Syrupy. Smooth. Caramel. The "Goldilocks" method. We leave the sticky, sugar-rich mucilage on the bean while it dries. The sun caramelizes these natural sugars, infusing the coffee with a complex, honey-like sweetness.
-
Best for: Espresso and milk-based drinks.
The Experimental Series
Wild. Funky. Unique. Carbonic Maceration & Yeast Fermentation. Using techniques from the wine industry, we ferment beans in sealed environments to create explosive flavors ranging from bubblegum to fine cognac.
-
Best for: Connoisseurs looking for something completely new.
